Found an excellent IP recipe online via eatwithinyourmeans.com

1 onion
2 peppers – this can include hot ones
1 cup brown lentils
1 cup orange lentils
1 tbsp cumin powder
1 tbsp smoked paprika powder
1 tbsp chilli powder
Bay leaf
Can of tomatoes or fresh
2 cloves of garlic, minces
3 cups veggy broth

1 small can sweet corn
Chopped spring onions
Chopped cilantro

Sautee onions and peppers. Wash lentils. Add cumin, paprika-powder, chilli and sautee for another minute. Add vegetable broth, tomatoes, lentils, garlic, bay leaf. IP on chilli-beans for 10 min, NPR.
After finishing add a cup of corn, spring onions and stir. Eat with nacho’s, guacamole, cilantro.
