Now that I’ve just finished making Something Tomato, I’m trying to figure out what to do with it. It’s a reduction of onions, tomato, garlic, herbs, in lots of olive oil, salt and pepper. I’m sure it goes well with pasta, or on a pizza, or in a sauce, or with meat. So better be named ‘Anything Tomato’.
500g, ripe Tomato’s
4 cloves of garlic
100 ml olive oil
Half a lemon
Sprig of thyme, oregano, rocket, other fresh herbs
2 tbsp Balsamic vinegar
2 tbsp Worcestershire sauce
3 tsp (taste!) sugar
Chop onions, tomatos and garlic, wash herbs and finely chop. Heat olive oil in a pan and sautee the onions with pepper and a bit of salt. Caramelize the onions to get a stronger flavor. Add tomatos, garlic, herbs, balsamic vinegar and half a lemon with zest. On medium heat, cover for about 20 minutes, to tender everything. Remove the lemon.
On low heat, reduce the mixture untill most of the liquid has evaporated. Add sugar, and taste for salt and pepper. Add Worcestershire sauce to taste. Puree mixture and add to cleaned jars, or cool down and freeze upon use.
